Fava, Sweet Pea, and Sugar Snap Pea Salad

Fava Beans?  Anyone?  Yeah, we didn't know what they were either so we were very excited to make a dish that included them!  They are the light green beans that look like over-sized edamame. We opted for the veggie version leaving out the prosciutto.  This dish proved to be a great snack over the days to follow.  We are always happy to find a healthy snack that will steer us away from pretzels and toast!   

Ingredients
4 lbs unshelled fava beans (about 2 cups shelled)
2 cups sugar snap peas, trimmed
1 cup shelled green peas (about 1 lb unshelled)
1/4 cup thinly sliced fresh mint
2 ounces prosciutto, thinly sliced (about 1/2 cup)
3 tablespoons red wine vinegar
1 tablespoon extravirgin olive oil
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

To Prepare
Remove beans from pods, discard pods.  Cook beans and snap peas in boiling water 1 minute or until snap peas are crisp and tender.  Remove beans and blanch them in a bowl of cold water.

Drain bean mixture and add mint (and prosciutto if desired).  Combine remaining ingredients, mix, and add to bean mixture.  Enjoy!
