Tomato Flatbread with Goat Cheese


We have to try any recipe that combines heirloom tomatoes and goat cheese. Goat cheese is soft to the palate and for those who normal cheese consumption consists primarily of craft singles, we advise you to try it on salads or on a flatbread! Heirloom tomatoes are also really special because each lineage of tomato has a history and they come in the most vibrant and beautiful colors. This flatbread is a light take on pizza that you can serve as an appetizer or along with a main course.


We had never made homemade bread before attempting to make this flatbread. Making the bread was actually fairly easy and totally rewarding! The dough has to rise for a total of two hours so make sure you block off time for that. While it was rising Big J cleaned her house and went to the gym which we think was a great use of time! This a great dish to serve at a party because it is simple to make and yields a hearty snack!

The final product. Advice: make sure you roll the dough super thin, definitely add extra cheese, and drizzle olive oil over the bread right before you serve it!
