Morel Mushrooms

Mushrooms are a great DEAL for your taste buds.  Although we have just passed Morel's peak season (early spring to late June), you can find them dried, canned or frozen year round.  Morel's come from the same family as truffles but have a more nutty or earthy flavor.  The rule of thumb when cooking with mushrooms is never to wash them.  Water is rapidly absorbed by the mushrooms and causes them to spoil.  Instead, you can clean them by gently brushing them with a kitchen towel or vegetable brush.  It is  best to store mushrooms in a brown bag in the refrigerator.   Enjoy morel mushrooms this summer sauteed with other summer vegetables.
