I Did it! Magazine Recipes Made at Home

Ever wonder if those recipes you find in magazines really look and taste as great as they claim? Let J and j test them out for you.  We will filter out the failures and leave you with delicious dishes that you can use to entertain or keep in the fridge for a solo meal.

Wild Rice and Barley Salad
I found this in the January/February 2008 issue of Cooking Light Magazine.  It instantly became one of my favorites. The basil and green onion make this rice pop with flavor. Great when paired with pork.  Enjoy!


Recipe
3/4 cups fat-free, less-sodium chicken broth
1/2 cup uncooked pearl barley
1/2 cup uncooked brown and wild rice mix
3/4 cup rinsed and drained canned chickpeas (garbanzo beans)
1/3 cup golden raisins
1/4 cup sliced green onions
2 tablespoons red wine vinegar 
1 1/2 teaspoons extra virgin olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons chopped fresh basil
2 tablespoons slivered almonds, toasted
